Cauliflower Couscous Bowl

INGREDIENTS
• 1 cauliflower, cut into florets
• 1 medium sweet potato, diced
• 1.5 cups canned chickpeas, drained and rinsed
• 0.8 cups whole wheat pearl couscous (or sub extra chickpeas for lower carb)
• 1.5 tablespoons olive oil
• 1 teaspoons smoked paprika
• 2 tablespoons pepitas (pumpkin seeds)
• 0.5 cups fresh parsley, chopped
• 0.3 cups fresh dill, chopped
• 0.5 cups plain nonfat Greek yogurt
• 1 tablespoons tahini
• 1 lemon, juiced
• 1 garlic clove, minced
• 0.5 teaspoons salt
STEPS
1. Roast the veg: Preheat oven to 425°F (220°C). Toss 1 cauliflower, cut into florets, 1 medium sweet potato, diced, and 1.5 cups canned chickpeas, drained and rinsed with 1.5 tablespoons olive oil and 1 teaspoons smoked paprika. Spread on a sheet pan and roast, stirring once, until golden and tender.
2. Cook couscous: Cook 0.8 cups whole wheat pearl couscous (or sub extra chickpeas for lower carb) according to package directions, then let cool slightly.
3. Make dressing: Whisk together 0.5 cups plain nonfat Greek yogurt, 1 tablespoons tahini, 1 lemon, juiced, 1 garlic clove, minced, and 0.5 teaspoons salt until smooth.
4. Assemble: In a large bowl, combine the roasted veg, couscous, 0.5 cups fresh parsley, chopped, and 0.3 cups fresh dill, chopped. Drizzle with the yogurt-tahini dressing and toss gently. Top with 2 tablespoons pepitas (pumpkin seeds).
NOTES
Swap the couscous for cauliflower rice or extra roasted veg to cut carbs further while keeping the fiber and protein from the chickpeas high.
Peanut Pasta Salad
Chickpea pasta and edamame boost the protein and fiber here, while the peanut sauce is thinned with yogurt instead of extra oil.
INGREDIENTS
• 8 ounces chickpea or lentil rotini (or whole wheat)
• 1 cups shelled edamame, cooked
• 1.5 cups red cabbage, shredded
• 1 cups carrots, shredded
• 0.5 cups fresh cilantro, chopped
• 2 tablespoons unsalted peanuts, chopped
• 3 tablespoons natural peanut butter
• 0.3 cups plain nonfat Greek yogurt
• 2 tablespoons rice vinegar
• 2 tablespoons low-sodium soy sauce
• 1 lime, juiced
• 1 teaspoons chili garlic sauce
• 2 tablespoons warm water (to thin sauce)
STEPS
1. Cook pasta: Cook 8 ounces chickpea or lentil rotini (or whole wheat) according to package directions, drain, and rinse under cold water to cool.
2. Make peanut sauce: Whisk 3 tablespoons natural peanut butter, 0.3 cups plain nonfat Greek yogurt, 2 tablespoons rice vinegar, 2 tablespoons low-sodium soy sauce, 1 lime, juiced, and 1 teaspoons chili garlic sauce together, adding 2 tablespoons warm water (to thin sauce) a little at a time until pourable.
3. Assemble: In a large bowl, combine pasta, 1 cups shelled edamame, cooked, 1.5 cups red cabbage, shredded, 1 cups carrots, shredded, and 0.5 cups fresh cilantro, chopped. Pour over the peanut sauce and toss to coat. Top with 2 tablespoons unsalted peanuts, chopped.
NOTES
Using a legume-based pasta roughly doubles the protein and fiber of regular pasta, which helps keep this filling in smaller portions.
Spicy Pasta Salad
Chickpeas add protein and bulk so you need less pasta; a hot honey Greek yogurt dressing replaces a heavier mayo-based one.
INGREDIENTS
• 6 ounces whole wheat pasta shells
• 1.5 cups canned chickpeas, drained and rinsed
• 0.5 cups pepperoncini, sliced
• 0.3 cups red onion, finely diced
• 0.3 cups feta cheese, crumbled
• 0.3 cups fresh parsley, chopped
• 0.5 cups plain nonfat Greek yogurt
• 2 tablespoons hot sauce
• 1 teaspoons honey
• 1 lemon, juiced
• 0.3 teaspoons salt
STEPS

• 2 cucumbers, diced

STEPS

NOTES

1. Prep vegetables: Combine 4 carrots, julienned or spiralized, 2 cucumbers, julienned, 3 green onions, sliced, and 0.5 cups fresh cilantro, chopped in a large bowl.
